Introduction

Using up things I had on hand. Great quick recipe, plenty of leftover and great reheated. Using up things I had on hand. Great quick recipe, plenty of leftover and great reheated.
Number of Servings: 6

Ingredients

    1 lb ground beef 93% lean
    10 oz frozen mixed vegetables
    1 cup brown rice
    1 large onion cut into pcs
    1 can Fiesta Nacho cheese soup
    1 cup water

Directions

Brown ground beef, drain off grease
Cook onion in beef until soft
Stir in frozen veggies and heat through
Stir in water and rice til cooked and soft
Stir in cheese soup and heat through
Add sour cream on side if desired, and serve with nacho chips.
Makes 6, 1 cup servings.
Leftovers tastes great reheated, but you may have to add a couple tablespoons of water to it.
