Serves 4 and is a good dish to do if you cook too much rice! Serves 4 and is a good dish to do if you cook too much rice!
Number of Servings: 4


    3/4 cup of raw brown rice
    (1 1/2 cups of cooked rice)
    1/3 cup (or more) grated cheese
    Olive oil
    2 bunches of spinach or chard
    2 onions chopped
    3 cloves of garlic
    mixed herbs
    salt and peper


Serves 4
1) In a wok or large pan saute the chard (spinach) stems, onions and garlic until the onions are transparent.

2) Stir in the cooked rice and put the chopped chard(spinach) leaves on top. Cover the pan and cook over low heat until the leaves are wilted. Then you can stir the leaves into the rice mixture.

3) Add grated cheese; stir until the cheese melts and holds the mixture together.

Serve - you can add a cup of cooked kidney beans - and I added some black peper and mixed herbs.

  • This was a terrific recipe. Very tasty and simple to make. The only suggestion I would make is to put the chopped leaves on top after cooking the stems and onions. Then add the cheese and rice in. I found that the rice tended to stick to the bottom of the pan the other way. - 2/24/10
