Ingredients

    Raisins, 1 cup (not packed)
    Water, tap, 1 cup (8 fl oz)
    Butter, unsalted, 2 tbsp
    Granulated Sugar, 1.5 cup
    Egg white, 4
    Vanilla Extract, 1 tsp
    Flour, white, 2.5 cup
    Baking Powder, 1/2 tsp
    Baking Soda, 1 tsp
    Salt, 1/2 tsp
    Cinnamon, ground, 1 tsp
    Cloves, ground, 1/2 tsp
    Rolled Oats, 2 cup
    Pecans, 2 oz

Directions

-Simmer raisins and water in a saucepan over low heat until raisins are plump, about 30minutes. Drain raisin liquid into measuring cup. Add water to make 1/2 cup.
-Preheat oven to 400 degrees.
-Cream butter and sugar. Add egg white and vanilla. Stir in raisin liquid.
-Blend together flour, baking powder, baking soda, salt, cinnamon, and cloves. Stir into butter. Add rolled oats (oatmeal), nuts, and raisins.
-Droup rounded teaspoons about 2" apart onto ungreased baking sheet.
-Bake 8 to 10 minutes.
Makes 56 cookies
