    2 cups dry great northern beans, rinsed and drained.
    2 cups extra lean ham, chopped into bite size pieces
    1 cup onion, chopped
    1 cup carrots, grated
    1/2 tsp sea salt
    2 tbsp dried chives
    6 to 8 cups of water


Rinse and drain 2 cups of great northern beans. Add to a large pot and fill with water (about 6 cups). Bring beans to a boil and remove from heat. Put lid on pot, leaving it cracked so heat can escape. Allow to sit untouched for at least one hour.

Re-rinse and drain beans. Add beans back to pot and add 6 to 8 cups of fresh water. Cook beans over low to medium heat for 2 to 2-1/2 hours, stirring occassionally. During last hour of cook time, add ham, carrots, onions, salt and chives.

Serve with homemade biscuits or cornbread.

Recipe Yields: approximately 9 - 1 cup servings

*You can omit sea salt in this recipe, if you are watching your sodium intake. It lowers the amount to 601.2 mg vs. 733.7 (132.5 mg savings)

    My mother used to make the same "Bean Soup" when I was little. This was a little bit of her recipe, merged with a little bit of mine. Thanks for commenting!
