    1 large Zucchinni
    3 lg. tomatoes
    2 ears corn
    2 Tbl. balsamic vinegar
    1 Tblsp. oregano, dried
    1/2 Tblsp basil, dried
    .5 tsp. garlic salt
    1 medium onion
    1/3 C. seasoned breadcrumbs


Slice up a large garden zucchini in about 1/2 inch pieces and quarter the pieces and throw in a large pan. Toss in your tomatoes, cut into pieces and the corn from 2 ears of fresh corn. Drizzle the balsamic vinegar over all and toss in the garlic, oregano, garlic salt and basil. Heat over slow heat until mixture begins to simmer. Simmer 20 min then add the onion. Simmer 25 min more and add the breadcrumbs. Toss and serve. I served it over whole wheat spaghetti.
