    **Flax Seed Meal (ground flax), 4 tbsp
    *Whole Wheat Flour, .75 cup
    *Flour, white, .75 cup (remove)
    Granulated Sugar, .5 cup (remove)
    Baking Powder, 2 tsp (remove)
    Baking Soda, .5 tsp (remove)
    Salt, .5 tsp (remove)
    Egg, fresh, 1 large (remove)
    Apples, fresh, 1.5 cup, quartered or chopped (remove)
    *Canola Oil, 3 tbsp (remove)
    Milk, nonfat, .5 cup (remove)
    Walnuts, .25 cup, chopped (remove)
    Dates, .25 cup, pitted, chopped (remove)
    Cinnamon, ground, 1.5 tsp (remove)


Makes 12 muffins

Blend dry ingredients together in a bowl. In a separate bowl, combine egg, canola oil, and milk. Add dry ingredients to eff mixture and stir just until blended. Fold in apples, dates, and nuts. Batter will be thick. Fill muffin cups (papered or greased well) 2/3 full. Bake at 400 degrees F for 18 - 20 minutes or until top springs back when touched.
