    1 cup whole wheat couscous,dry
    1 cup chicken broth
    1 cup cherry tomatoes, halved
    2 scallions, sliced
    salt and pepper
    1 Tbsp olive oil
    Juice and zest of 1 lemon, or to taste


Combine couscous and chicken broth. Bring to a boil; cover and remove from heat. Let stand 5 minutes. Fluff with a fork.

Combine couscous with remaining ingredients. Toss to mix.
