Ingredients

    1 whole large head of cauliflower
    1 medium chopped onion
    1 cup of celery chopped
    2 15 ounce cans of fat free chicken broth
    1/2 tsp ground coriander
    1/2 tsp salt
    pepper to taste
    2 tbsp olive oil
    1 /4 cup non fat dry milk

Directions

Saute onion and celery in olive oil until translucent. Add cauliflower and coriander and cook for two minutes. Add broth and bring to boil. Add salt and pepper. Simmer for two minutes. Add non fat dry mik. Remove from heat and allow to cool for five minutes. Use hand held blender to emulsify. Serve hot.
