Introduction

Brown 1lb. package of turkey sausage breaking it into as small of pieces as you'd like in your burrito. I also snuck in a tiny bit of chopped onion, you could also add other veggies like bell pepper, but I wanted my kids to eat these. In separate pan, scramble eggs, my package of tortillas had 9 instead of the 8 it was supposed to have, so I used 9 eggs, again breaking them into pieces you'd enjoy. I prepared 9 pieces of plastic wrap with a tortilla on each. When the sausage and eggs were done and cooled slightly, I divided each mixture and placed on the center of each tortilla. Then I divided up a bag of shredded cheese, mine was Quesadilla cheese, but any shredded cheese you enjoy would work. Wrap each tortilla into a burrito, then wrap with plastic wrap. Place warpped burritos into freezer bags and label. They should last up to 6 months, just remove from bag and warm in microwave in the wrap .
