    1 can (28 oz) Las Palmas green chile enchilada sauce,
    5 Chicken Breast, no skin, , bone and skin removed
    16 Misson Yellow Corn Tortillas (extra thin ones)
    16 tbsp Sour Cream, reduced fat,
    4 cups Rosarita Refried Beans, Fat Free,
    8 oz Mozzerella, Kraft part skim


simmer chicken in enchilada sauce (i like to let it cook all day in the crockpot) - or you can boil the chicken then shred and simmer in sauce for about 30 minutes then layer with cheese and tortillas bake till tortillas are warm then top with lettuce and sour cream serve with a side of refried bean (i add salsa to my beans for more flavor) and enjoy
