    2 C. All Purpose Flour
    2 tsp. Baking Powder
    1 tsp. Baking Soda
    1 C. Sugar
    1-1/2 C. Mashed Bananas - as Black as possible (about 6 small/3 large)
    1 Egg Large
    2 Tbs Canola Oil
    1 tsp vanilla
    1/2 C. Sour Milk (add 1 tsp of white vinegar to 2% milk to sour)
    (If you prefer nuts you may add)
    1/2 Walnuts Chopped (this in not included into the calorie count)


Pre heat oven to 350 degrees. Lightly spray and flour 1 loaf pan, or prep muffin tin with paper cups.

Blend Dry ingredients in large bowl: Flour, Baking Powder, Soda, and Sugar.

In medium Bowl Mash the Over ripe Bananas (about 6 small/3 large). Add Egg, Oil and Vanilla. Add to dry ingredients. Add the 1 tsp white vinegar to milk to sour, and slowly mix into the rest of the ingredients. Pour into your prepared loaf pan, and bake for 50 minutes (muffins for 20 minutes). Test doneness by tooth pick inserted into center. Enjoy!
