Introduction

Ingredients

    Yukon Gold Potatoes, 2 medium = 400 grams, peeled and quartered
    1/2 cup buttermilk
    salt and pepper
    1 teaspoon butter

Directions

Just cover the potatoes with salted water and boil for 20 minutes or until fork tender. Drain, put back in the pot over low heat. Mash then add the buttermilk and salt and pepper, mash again, then beat with an electric mixer until fluffy. Pile into a heated serving dish, and top with the butter. Serves 2 generously, or 4 moderately.
