    2 cups shredded zucchini
    1 cup whole wheat flour
    1 cup white flour
    1/2 cup sugar
    1/2 cup brown sugar
    1 Tb vital wheat gluten
    2 tsp baking powder
    1 tsp baking soda
    1 tsp salt
    2 eggs
    1/2 cup oil
    1 cup chopped pecans (optional)


Preheat oven to 350.F. Mix dry ingredients. Mix wet ingredients, including zucchini, then add to dry. Add pecans. Pour batter into mini muffin pans. Bake for about 8 minutes. (Keep an eye on them, they're little!)
