Introduction

This is a great low-cal alternative to mash potatoes. Surprisingly, I think it tastes similar to the point you won't miss them even! Cauliflower with cream cheese & cheddar cheese to top. Ingredients

    1 small head Cauliflower, chopped into small pieces
    4 Tbsp Philadelphia 1/3 Less fat cream cheese
    1/2 tsp Salt
    1/4 tsp White Pepper
    1/2 Cup low-fat shredded cheddar cheese
    2 Tbsp Parmesan Cheese
    1/2 tsp Paprika
    Garlic cloves (optional, I tried it with the garlic and was too much garlic tastes fine without it!)

Directions

Boil Cauliflower till tender. Process cream cheese in food processor or blender. Add in cauliflower and garlic blend until smooth. Add in Parmesan, salt and pepper.

In a small 1 QT greased pan pour in cauliflower mixture. Sprinkle paprika and shredded cheddar on top. Bake at 350 for 20 mins or until bubbly.

Makes 4 servings.

    Delicious! I used Laughing Cow garlic & herb cheese instead of cream cheese and still got the creaminess. I'll definitely be making this again. - 9/8/10

    I used lowfat sour cream instead of cream cheese since i didnt have any on hand. Also used a little bit of smoked cheddar. excellent!! - 10/19/09

    Just made this and it is delicious! So creamy and rich. Great way to get those veggies in! I did the cauliflower in my Instant Pot. Placed the florets in a steamer insert for 3 minutes, cooked on high pressure, manual release. - 1/3/19

    AHHHHH...MAZING! This was so good I almost felt like I shouldn't have been eating it!I did add the Garlic as my husband and I LOVE Garlic but would be super tasty without it. It was a little mushy next time will dry with paper towel before blending. I would eat this as a meal it's THAT good! - 1/6/12

    My duaghter and I love this. I used only 1/4 cup of reduced fat cheddar cheese to save some calories and it was still delicious. I also omitted the paprika because I wasnt sure my daughter would like it. Very good! - 3/6/10

    Thanks for this recipe! My husband and I (both cauliflower haters) loved this. I knew I would but he wasn't sure. Then he told me he would eat this instead of mashed potatoes anytime. I used a 16oz size bag of frozen cauliflower but kept all other ingredients the same. - 1/31/10
