Introduction

You can substitute vegetables. You can substitute vegetables.
Number of Servings: 6

Ingredients

    Red and Yellow peppers, approx. 1/4 cup
    Scallions 1/4 cup
    Celery 1/4 cup
    Potato, 1 large
    Garlic 1 clove
    Spinach, 2 cups
    Mushrooms, 1/4 cup
    Olive Oil, 2 Tbsp.
    Butter, 1 Tbsp.
    Salt to taste

Directions

Spray pan, preferably nonstick pan, with cooking spray. Add olive oil and butter, heat slowly. Add all ingredients except spinach and salt. Cook over medium heat until vegetables are soft and potatoes are slightly browned. Add spinach. Cook an additional 5 minutes or until spinach wilts. Sprinkle a dash or two of salt to taste.
