    1 Small Zucchini, sliced lenghtwise
    1 Tbsp olive oil
    3 Tbsp Hummus
    4 Kalamata Olives
    Lettus leaves
    1 Carb Bal. Whole Wheat Tortilla (fajita size)
    Spices of your choice


Place Zucchini on a cooking rack over a cookie sheet. Brush with olive oil on both sides. Sprinkle herbs of choice, (I use basil, garlic, onion, parsley). Set oven on Broil and broil til lightly brown.
Meanwhile, heat tortilla in oven for about 3-4 mins, unless you like it a bit chrunchy then longer. Take tortilla, spread on the hummus, slice your olives and place them over the hummus. Top with cooked zucchini and lettus leaves. Wrap and enjoy!
