    3 red potatoes cut in quarters
    1 bell pepper cut in cubes
    1 med. onion roughly chopped
    5 cloves garlic roughly chopped
    1 cup sliced tomato
    2 Tbls. olive oil
    juice of 1/4 lemon
    1 tsp dried oregano
    3 oz. crumbled Feta cheese


Combine all ingredients in a small baking dish. Cover with lid or foil and bake at 350F for 30 min. Remove cover. Bake for 15 min. more. Check for doneness. Sprinkle with Feta and cook another 10-15 minutes.
