Ingredients

2 cups, or a 750 gram container of whole milk plain yogurt without gelatin, etc. Astro is very good.
one cucumber, either English or common
1 tsp salt
1 tsp cumin
fresh chives or 1 green onion
dash of hot Hungarian paprkia (optional)
Directions
Line a sieve with cheesecloth, put it over a bowl, empty in the yogurt, and let it drain overnight. Next day, discard the liquid in the bowl and use the remaining thick yogurt.
Next day, grate the cucumber, and squeeze in a towel to remove excess moisture.
Finely chop the chives or green onion and mix it all together.
Let sit for 2 hours for flavours to blend before serving.
Makes 8 servings to go with Tandoori Chicken.
