    1 cup uncooked Quinoa
    2 cup water
    1 Tbsp Olive oil
    1 carrot (5 1/2") chopped
    1 cup chopped summer squash
    1/4 onion
    2 garlic cloves
    1/2 cup frozen peas
    12 cup raisins


Add water, raisins and Quinoa into a small sauce pan, bring to a boil. Reduce heat and simmer til all the water is absorbed.

Meanwhile, heat Olive oil, add onions and carrots, stir til onions are translucent. Add squash, peas and galic, cook stirring for until squash is tender but still crisp.

Once Quinoa is cooked add it to the veggies.
