    3/4 cup dry couscous
    1 1/2 cups vegetable broth
    1-2 TBSP olive oil
    1/2 med onion, chopped
    3 cloves garlic, minced
    1 medium summer squash, diced
    1 medium zucchini, diced
    15.5 oz can OR 2 cups cooked chickpeas
    1/2 cup feta cheese crumbles


Cook couscous according to package directions. I prefer to use vegetable broth instead of water for more flavor.

Heat oil in pan at med & saute onions in olive oil. When starting to soften, add zucchini, summer squash & garlic. Stir, cover & turn heat to low-med. Cook, stirring occasionally, for 10-12 minutes or until squashes are fork tender. Add chickpeas, couscous and remaining broth. Stir to combine & cook, uncover, for another 2-4 minutes.

Served to plates 7 let everyone add own feta. Makes life simpler that way. ;)
