This doesn't have iceburg in it, so it's tasty! There's no tart tomato wedges and the feta cheese keeps you from using sloppy salad dressing. my husband LOVES this, but HATES salad! Ingredients

cherry or sliced tomatoes if desired
sundried or marinated tomatoes
about one bag or enough baby spinach leaves to fill a lg bowl
one medium onion, diced
one or two grated carrots
very small broccoli heads, cut up (I prefer grated broccoli stems, to match the grated carrots)
1 pkg feta cheese, preferably artisan (israeli feta is best) DO NOT use fat free, it's too rubbery.
one or two tbsp olive oil
green, red or yellow bell peppers (or hot peppers ifyou prefer)
Directions
just mix all the ingrediants and serve! Will keep for about 3 days, when you get to the bottom of the bowl where the oil sits, don't just throw it out, add more veggies and keep going! This is a very economical way to use left over veggies that aren't enough to use for anything else. DO NOT use fat free or reduced calorie cheese. I have the best luck with my local stores' artisan-style, store packaged Israeli Feta. And I have left over feta for Pita Pizzas. You don't use any dressing (remember, prepared foods are the same as fast foods, they both = DEATH by chemicals) in this salad, so the feta needs to be smooth to the taste and flavorful!
