Introduction

This recipe came about after I started a pot of soup before I checked the pantry. When finished my daughter said "hey this tastes like tamale pie" thus the name. Ingredients

    1 lb. lean ground beef, browned,drained and rinsed under hot water to remove fat
    1 can ranch style beans
    2 can corn
    2 can tomatoe soup, undiluted
    1/4 cup hot salsa
    4 cups water
    2 Tbsp. Greek seasoning blend or any blend you prefer
    2 tsp. garlic powder
    2 tsp onion powder
    2 tsp season all
    2 Tbsp chili powder
    1 cup elbow macaroni
    1/4 cup shredded chedder or mexican blend cheese(low fat)
    1/2 cup mashed potato flakes
    extra shredded cheese
    corn chips

Directions

Place all first eleven ingredients in in a large pot; bring to a boil and add macaroni. Cook until macaroni is tender; stir in mashed potato flakes to thicken, stir in 1/4 cup cheese and heat through. Serve sprinkled with extra cheese and corn chips. (don't forget to add the calories for these extras, they arn't included in the totals to allow for individual tastes) Makes; approx. 10 one cup servings
