Introduction

Ingredients

    2 Tbsp canola or olive oil
    1/2 cup chopped onion
    1 lb pork tenderloin cut into 4 even chops (approximately 4 oz each)
    1/2 tsp salt
    ground black pepper to taste
    2 granny smith or any firm apple-pealled, cored and sliced
    2 Tbsp brown sugar
    1/2 tsp ground mustard or 2 Tbsp coarse ground mustard
    1/8 tsp ground cloves
    3/4 cup hot water

Directions

preheat oven to 375 degrees
heat the oil in a large skillet and saute onions in the oil until carmalized. Remove onions and set aside. Season the pork slices with salt and pepper then brown them on both sides in the remaining oil.
place the pork in an 8 by 12 inch baking dish and cover with the onion and the apple slices.
Mix the remaining ingredients together in a small bowl and pour over the pork. Cover and bake 20-30 minutes. Remove foil and bake another 15 minutes.
