A good sauce to top chicken with. Would probably go well with enchiladas too. A good sauce to top chicken with. Would probably go well with enchiladas too.

    1/4 med. onion chopped
    2 cloves garlic minced
    1 can green chiles about 1/2 cup, drained
    1/3 cup light whipping cream
    1/4 cup chicken broth
    1 tbsp extra virgin olive oil
    1/4 cup light sour cream


Heat olive oil in a skillet. cooke onions until soft and add garlic. Cook for 1 minute. Add chicken broth just enough to deglaze (you can also slice chicken and cook that before deglazing) about 1/4 cup. Add green chiles and whipping cream and light sour cream. Let simmer for a few minutes as it will thicken.

I use this sauce to top my chicken, just add a little sharp cheddar on top. After my sauce reaches the right consistency, I return the chicken to the pan and heat through just enough to melt the cheese. Can use this any way you'd like. Be creative!
