Ingredients

    2 cups of diced or shredded zucchini
    1 medium onion, chopped
    1/4 cup grated Parmesan cheese
    1/2 cup grated fat free Mozzarella cheese
    1 cup Heart Smart Bisquick
    3/4 cup Egg Beaters
    1 lb lean ground beef
    1 tablespoon fresh parsley, chopped
    1/2 teaspoon garlic powder
    Salt and pepper to taste
    1/2 cup more grated fat free Mozzarella cheese

Directions

Preheat your oven to 350 and spray a deep pie dish with cooking spray.

Combine all ingredients in a large bowl, except for the second 1/2 cup of Mozzarella. Dump into the prepared pie dish. Top with remaining cheese. Bake for 30-35 minutes, or until the filling is set and the cheese is melted and golden brown.

Makes 6 servings.
