Ingredients

    Summer squash 2 large-sliced thin
    carrots 2 medium-sliced thin
    onion 1 medium-chopped
    potatoes 1 medium peeled-sliced thin
    3 cups vegetable broth
    1 cup water
    6 tbs butter

Directions

Melt the butter in a pot and add the chopped onions. Cook till soft. Add the rest of the vegetables and the stock. Bring to a boil, reduce heat and simmer half covered for 20 mins or until the vegetables are soft. Let cool for 10 minutes.
Working in batches puree the soup in a blender. Transfer to a clean pot, simmer for 3 minutes, add water if too thick. Serve with fresh parsley.
