    6 eggs
    2 cups fresh mushrooms sliced
    1/2 cup chopped scallions
    2 oz shredded Swiss Cheese
    4 tsp Olive Oil


*preheat oven to 450

In a saute pan on high heat add oil to the pan. When hot add mushrooms and scallionssaute until soft. Add to the pan the eggs which you have beaten well. Gently stir the mixture around pushing the eggs from the outside to the center. When the eggs are setting up, top with the shredded swiss cheese (or whatever kind of cheese you like). Place pan in the oven until the cheese is melted and the eggs puff up. Cut in 4 wedges and serve.
