    1 cup spelt flour
    1/2 cup whole wheat flour
    3/4 cup cornmeal
    1 tbsp sucant
    1/4 tsp stevia powdered extract
    1 1/2 tsp baking powder
    1/2 tsp baking soda
    1/2 tsp cinnamon
    1 1/4 cups skim milk
    1 egg
    2 egg whites
    2 cups fresh or frozen blueberries


Preheat oven to 400 degrees. Combine all dry ingredients in a mixing bowl. Add remaining ingredients; stir JUST until combined. Divide among twelve muffin cups. Bake for approximately 15 minutes.
