    3/4 cup whole wheat flour
    1/4 cup brown rice flour
    1/4 cup graham flour
    14 cup spelt flour
    2 tsp. baking powder
    1/2 tsp. baking soda
    cinnamon to taste
    pinch salt
    1 cup non-fat or low-fat plain greek yogurt
    1 tsp. vanilla extract
    1 tbsp. raw agave nectar
    1 tbsp. raw honey
    1 egg
    1 large peach, peeled and diced.

    Optional topping: sprinkle on rolled oats, chopped nuts, and a drizzle of honey


*Pre-heat oven to 350 degrees F.
*Mix diced peaches with a 1/2 tsp. of honey and sprinkle of cinnamon and set aside.
*In a separate bowl, mix the dry ingredients together and set aside.
*In a separate bowl, whisk the wet ingredients together and then add them to the dry ingredients. Combine gently.
*Fold in the peaches.
*Bake in a greased loaf pan for 40 minutes or until the top springs back when poked gently.
