This is a recipe I put together as an alternative to old fashion fried chicken This is a recipe I put together as an alternative to old fashion fried chicken
Number of Servings: 4


    2 - Skinless Boneless Chicken Breast (bone & skin removed, split in half)
    1 cup - whole wheat crackers
    1 cup - plain or seasoned bread crumbs
    1 large egg
    1 cup milk
    1 tsp salt
    1 tsp pepper
    1 tsp garlic
    2 TBLSP Olive oil
    Non stick cooking spray


Mix the egg and milk together (you can use a low fat buttermilk as well), set aside. Take your chicken and tenderize. Put chicken breast in the milk mixture and allow to soak for about 5 to 10 minutes. Mix crushed crackers and bread crumbs together with seasonings of your choice. Coat chicken in the bread cumb mixture. Put chicken in a baking dish with non-stick cooking spray on the bottom of the pan. Once you have coated all the chicken with the bread crumb mixture drizzle the olive oil over the the top. Cover and allow to bake for 15 minutes at 350, uncover and cook the remaining 15 minutes or until chicken is cooked through. Enjoy!

    sorry I have corrected this. I had the amounts on the wrong side and they were not showing up on the receipe. I have fixed. This is a great receipe that I had found, you can add or take away spices to your preferences
