    3 roma (plum) tomatoes - Chopped (or 1 1/2 - 2 cups halved grape tomatoes)
    1 Green Bell Pepper - Chopped
    1 Red Bell Pepper - Chopped
    1/2 Red Onion - Chopped
    25 Large Black Olives- Chopped
    1 Tbsp Extra Virgin Olive Oil
    1.5 tsp ground oregano leaves
    4 tbsp red wine vinegar
    salt and pepper to taste


Chop all veggies and then add oil, vinegar and seasonings. Blend well and chill.

Serving size: 2 Tbsp

Serve as topping on bruschetta, on hummus, with feta cheese, etc.
