Introduction

Delicious, cheap, versatile, and easy!! Delicious, cheap, versatile, and easy!!
Number of Servings: 2

Ingredients

    1 cup dry Vitaspelt pasta
    1 1/2 cups frozen broccoli
    1 small zucchini, grilled and chopped
    1/3 cup roasted red bell pepper, chopped
    1/4 roasted/grilled green bell pepper, chopped
    6 oz canned tuna, drained well
    1/4 cup rice vinegar
    1 tbsp basil
    1 clove garlic, pressed/minced
    salt and pepper to taste

Directions

Cook pasta according to package and drain.
While pasta cooks, steam broccoli and chop everything.
Pour pasta over chopped veggies and mix, then add in remaining ingredients and stir well. Serve warm or chill first - it's great both ways!!
