Introduction
When the garden runneth over, this is a great way to use up some of the tomatoes. Serve with fresh fruit and a salad for a light, wonderful, summer meal. Ingredients

1 T. Olive oil
1 large onion, diced
4 large green tomatoes, diced
1 jalapeno pepper, seeds removed, finely chopped (Or can use 1 T. jarred, chopped hot peppers found with the pickles in the grocery store)
1 clove garlic, minced
1 T. chopped, fresh oregano or 1 t. dried
4 c. chicken broth
1 c. finely chopped lean ham
1/2 t. liquid smoke, (hickory smoke flavoring usually found with spices or with BBQ sauces in grocery store)
1 1/2 c. long-grain brown rice
Directions
Heat oil over medium-high heat in large sauce pan that has a tight fitting lid. Add onion and saute until translucent and soft, about 8 minutes. Add green tomatoes, jalapeno, garlic, and oregano and continue to saute another 1 - 2 minutes stirring constantly.
Add all other ingredients, stirr well and increase heat to high. Once mixture begins to boil, immediately reduce heat to low, cover and simmer about 40 minutes or until all broth has been absorbed and rice is tender. Serve warm.
