Delicious and easy quiches, with lots of veggies and large servings! Delicious and easy quiches, with lots of veggies and large servings!
Number of Servings: 6


    4 large eggs
    3/4 cup milk
    Large handful of shredded cheddar
    Herbs of choice- i used dill and parsley
    Pepper and salt
    2+ cups seasonal veggies- in this rendition, I used what i had on hand, some red pepper, onion, edamame and broccolli
    1 tsp olive oil


Preheat oven to 350
Saute garlic and vegetables in olive oil for a few minutes until just softened.
Beat eggs, milk, garlic, pepper, salt & herbs. Add sauted vegetables, and divide between 12 muffin tins. Bake at 350 for 20 minutes or until puffy and egg isn't too wobbly. Serve.
