Introduction

This is just a quick wrap I threw together for lunch today. The nutrition info will change according to the type of wrap you use, I use the South Beach Whole Wheat Tortilla which has 4 more grams of fiber than the one I found listed here. The prep time does not incluse cooking the egg. This is just a quick wrap I threw together for lunch today. Ingredients

    1 large hard boild egg
    3 TBLS great northern beans
    1 tsp yellow mustard
    1 1/2 TBLS light mayo
    1/4 cup thinly sliced cucumber
    1 leaf lettuce
    1 wheat tortilla about 8 inches

Directions

Chop the egg. Mix the egg, beans, mayo and mustard (and salt and pepper to taste).
Warm the wrap to make sure it's soft. Lay the cucumber on the wrap then top with the salad then the lettuce. Roll up and enjoy!
