Ingredients

    2 pounds lean beef, cut into 3/4 inch cubes
    4 carrots, chopped
    2 medium onions, chopped
    3 cloves garlic, chopped
    1 tsp yellow curry powder
    1 tsp garam masala
    1/4 cup tomato puree
    24 ounces low sodium beef broth
    1 14.5-ounce can chickpeas, drained and rinsed
    1/2 cup raisins
    1/2 cup chopped dried apricots
    2 T chopped cilantro, leaves only
    1/4 cup toasted slivered almonds

Tips

Cut the dried apricots with kitchen shears rather than a knife.


Directions

Pat the meat dry with a paper towel.

Place a large saute pan over medium heat. Add the oil to the hot pan, then add the meat. Sear the meat on all sides, then remove the meat and set aside. While the pan is still hot, add the carrots, garlic, and onions. Saute, stirring occasionally for 5 minutes. Add the spices and tomato sauce and stir to combine. These steps can be done the night before.

Add the beef, vegetables and stock to the slow cooker. Cook on low for 6 hours, then stir in the chickpeas and chopped fruit. Cook one more hour.

Sprinkle on the cilantro and almonds before serving.

Serve with whole-wheat couscous, prepared according to package directions. (Nutrition info not included.)

Makes 8 1-cup servings or 12 2/3-cup servings.

    We really enjoyed this. Typical Chef Meg recipe: takes longer to prepare than you expect (lots of chopping!), but tastes great! Garam masala is not something I can buy in my little rural grocery store, so I substituted 1/4 t. each of chili powder, cumin, coriander, and cinnamon. Yummy! - 2/4/12

    This was amazingly good. If I could give it 7 stars I would. However, bear in mind that the calorie count doesn't factor in sauteeing the beef and onions and carrots, as it instructs. - 4/27/12

    WOW! My appartment smells like Heaven! I tasted it and it's delicious! I added some corn starch diluted in water at the very end and pur it on the "Auto" mode to get a thicker sauce. I will definetly eat it with couscous and I'm sure it's will be delicous reheated as lunch. - 3/25/12

    I was surprised at how much I liked this. Used dried cherries, 1/2 C crushed tomatoes, 1 onion, extra of the seasoning, coriander, flour to thicken and a 2 lb bottom round roast for the meat. Calories do not factor in oil for browning which is weird. Otherwise, a great recipe! - 11/12/12

    We really enjoyed this stew. It was such a pleasant surprise. I did not have any tomato puree so I used a can of Rotel with habanero and substituted the garam masala with pumpkin spice . This was so YUMMY! - 2/25/12

    I added a tablespoon of flour mixed with some of the liquid and stirred it in and let it cook a little longer- I prefer a thicker sauce rather than a broth. - 2/22/12

    Fabulous flavor - restaurant-quality meal. I prepared everything the night before, basically marinating the beef and vegetables in the pot in the refrigerator. Added the fruit plus dried cherries after work. Don't skip the almond slivers - they added great texture. - 2/4/12

    Was very good, but it did need a little more flavor.We added more curry powder and garam masala - for a total of about a tablespoon each, and it that made the difference! I served it over farro, and it was a delicious meal! Also season the meat and veg with a little salt and pepper when sauteing. - 1/24/12

    My family enjoyed this, even the one child who swears he doesn't like dried apricots. Also, I got started on this late in the day. After sauteeing, I brought vegies & broth up to near boil and then poured into crock pot and cooked on high for almost 2 hours and then added peas & fruits for 1 hour. - 1/4/12

    I love a good stew! One pot lasts about a week for us. Maybe I''ll try the apricots. I often use a dried cherry mix and raisons along with other ingredients in my stews which usually include either wine or a couple bottles of good, dark stout. The cherries add a very nice flavor. - 12/27/11

    Had this tonight with pearl couscous. Both hubby and I enjoyed the rich flavors. I did increase the spices to two teaspoons, think next time I will increase to a tablespoon each on the curry and garam masala. The almonds and cilantro really finish the chorus of flavors.

    This was delicious. One of the first low sodium meals I have made so far that had a great flavour! (For the las couple weeks my food has not been popping in my mouth) My junk food eating BF even loved it. Awesome! - 2/2/12

    I made this into a "faster" type meal tonight because I just thought it sounds wonderful. Boy, WAS I RIGHT! Even making it quickly (1 hour from start to finish) it is absolutely delish! If you like middle eastern foods or are not sure if you do, give this one a try! - 1/27/12

    This was very good, but the idea that it takes ten minutes for prep time is pretty much fantasy. I might add more of the seasonings next time, and perhaps cook it a little shorter in hopes that the flavors remain more distinct. The whole family liked it. - 12/14/14

    I really enjoyed this stew!! It was so very tasty. I did add more garam masala and curry to the dish, and I also added a tiny bit of sea salt. Otherwise, I did not change a thing. It was easy and great for the slow cooker. - 9/24/13

  • This is not a North frican stew, the spices are those common in India. My Morrocan stew is spiced with ginger, cinnamon and cumin which are common in North African cooking curry and garam masala are not. - 1/23/20

    I cut the recipe in half, and it was still awesome! I accidentally put in a bit too much tomato, which may have slightly masked the flavors, but the beef was tender, the flavor delicious.   • I substituted white beans for chick peas, which I did not have, and I cooked the dried apricots into the stew from the start because my family aren't partial to fruit in savoury dishes. That way the flavour gets in and they don't know they're eating it. ;) Smells gorgeous, can't wait to taste. - 1/22/17

    I tried this recipe for my husband and myself on Thanksgiving (since we'd already had turkey, etc.) and it is, without a doubt, the best stew I've ever tasted. My husband loved it, too.     Very delish! I had to cut the recipe in half. I used three carrots and added one small sweet potato cut into chunks about the size of the carrots. Also, I was not able to use the crock pot.     This is absolutely phenomenal. I prepped everything the night before and let it sit in the crock pot in my fridge overnight, and added some diluted corn starch at the end of cooking to make it a thicker stew vs a broth. Also tastes wonderful days after it's made. - 11/14/12

The serving size seems a bit small for 370 calories per serving (without oil for browning), but it's because of the nutritious garbanzos, dried fruit, and almonds.
