    1 c. boiling water
    3/4 c. Bob's Red Mill 100% SG Cornmeal
    1 1/4 c. 1% milk
    2 eggs
    1 c. Quinoa flour
    1 tbsp. baking powder
    1 tsp. salt
    1/4 tsp. baking soda
    1/4 c. canola oil


Pour water over cornmeal, stir until slightly thickened. Add milk; beat in eggs. Add flour, baking powder, salt and baking soda. Add to cornmeal mixture. Stir in oil. Bake on hot ungreased griddle. Makes approx. 20 pancakes.
