Introduction

A healthier version of the banana bread!!! Sooo good! A healthier version of the banana bread!!! Sooo good!
Number of Servings: 20

Ingredients

    2 cups whole wheat flour
    1 tps baking soda
    2 tps baking powder
    1/2 tps salt
    1/2 cup demerara sugar (cane)
    1/4 cup shortening
    1 lg egg
    3/4 cup low fat plain yogurt (or vanilla, but it has more sugar in it)
    1 tsp vanilla
    2 medium, mashed banana

Directions

Mashed the banana, set aside.
Mix sugar with the shortening. Add the egg, vanilla and yogurt and mix well.
Mix all dry ingredient and add to the egg mixture, and add the banana. Pour in 2 lightly greased loaf pan.
Cook at 350 F for 45-60 min.
Makes 2 bread, app, 10 slices per bread.

    very good and I made it gluten free by using brown rice flour - 11/23/09
