Yummy way to use up zucchini! Yummy way to use up zucchini!

    2 c zucchini
    1c yellow summer squash
    1 c carrots
    2 tsp minced onion
    2 tsp minced garlic
    1 T olive oil
    1/2 c water
    1 tsp oregano


Heat oil in pan (I use a wok). Slice vegetables and add to pan (I always add carrots first as they take the longest to cook). Add water. Then add oregano. Let it cook until the vegetables are steamed to your likeness. ( Usually about 10 to 15 minutes.)
