Ingredients

1/4 cup margarine or butter
1 TBS chopped fresh chives or parsley
1 clove garlic, finely chopped
6 skinless, boneless chicken breast halves(~1.5 lbs)
3 cups corn flakes, crushed (1.5cups)
1/2 tsp paprika
1/4 cup buttermilk or milk
Directions
6 Servings
Mix margarine or butter, chives, and garlic. Shape mixture into rectangle, 3x2 in.Cover and freeze for about 30 min. or until firm.
Heat oven to 425*. Grease square pan, 9x9x2 with shortening, or for no calories, use PAM
Flatten each chicken breast half to 1/4 inch thickness between plastic wrap or waxed paper.
Cut margarine mixture crosswise into 6 pieces. Place 1 piece on center of each chicken breast half. Fold long sides of chicken over margarine. Fold ends up and secure with toothpick.
Mix cornflakes, parsley and paprika. Dip chicken into milk, then coast evenly with cornflake mixture. Place chicken, seam side down, in pan.
Bake uncovered about 35 minutes or until juice of chicken is no longer pink in center where it is thickest
