    2 Tbsp. Butter
    3/4 cup Apple Sauce
    3/4 cup packed brown sugar
    1 egg
    1 teaspoon vanilla extract
    1-3/4 cups whole wheat pastry flour (you can substitute whole wheat flour)
    1/2 teaspoon baking soda
    1/2 teaspoon cream of tartar
    1 small banana, ripe
    2 tablespoons white sugar
    1/2 teaspoon ground cinnamon


Cream butter and sugar till fluffy. Add egg, vanilla, and banana. Beat well. Add dry ingredients.

Take 1 Tbsp of dough at a time and roll in sugar cinnamon mixture. Place 2 inches apart on ungreased cookie sheets.

Bake at 375 degrees for 8-10 minutes.
