Ingredients

    1-2 Sweet potatoes, sliced thinly
    Fat Free evaporated milk
    Brown Sugar
    Mini marshmallows or marshmallow cream
    Chopped Pecans

Directions

Preheat oven to 350 degrees. Spray muffin tin with cook spray. Layer potato slices and brown sugar in the tins. Pour 1/2 a tbsp of evaporated milk in each muffin tin. Cover with aluminum foil and bake for 20 minutes. Remove foil. Bake an additional 10 minutes. Top with marshmallows and pecans and bake an additional 5 minutes or until marshmallows are melted.
