Enchiladas made with shredded chicken, chipotle peppers and cheese. Enchiladas made with shredded chicken, chipotle peppers and cheese.

    5 flour tortillas
    1/2 c. mexican cheese
    1/2 c. mozzarella cheese
    4 oz can shredded chicken breast
    1 can chipotle peppers in adobo sauce
    2 sm. cans red enchilada sauce


Stack tortillas on a plate with a paper towel between each, microwave 30-45 seconds or until softened.
Combine the chicken and chipotle peppers in a food processor to form a finely shredded mixture.
Spread on each tortilla in no particlar order: cheeses, chicken/pepper mixture, a small amount of enchilada sauce.
Roll up tortilla with the seam side down, cut in half for a more enchilada-sized pieces.

Spread some enchilada sauce on the bottom of a baking pan (you may need two, depending on the size of your pan).
Line enchiladas in the pan against each other so they are less likely to unroll.
Top with remaining enchilada sauce and cheese.
Bake in 350 degree oven for 10-15 minutes or until cheese is melted.

Makes 10 servings. 1 enchilada = 1 serving.
