    1 Large Zucchini (can substitute smaller sizes as desired)
    1 tsp olive oil
    3 Tbsp shallots
    3 cloves garlic
    3 medium mushrooms
    10 oz extra lean ground Turkey (Jennie-O)
    2 chicken apple sausage links (Adells)
    1 c cooked barley
    1 c black beans, rinsed
    1 Tbsp fresh oregano
    1 Tbsp fresh thyme
    1 tsp kosher salt
    2 Tbsp Parmesan Cheese
    1/4 c grated mozzarella cheese (or two mozzarella sticks)


Makes 6 servings
Preheat oven to 350
Remove sausage casings and break meat apart.
Cut zucchini in half and scoop out and discard inside.
Place cut sides down in a baking dish and bake 15 minutes (about halfway done). Remove, turn cut sides up and set aside.
Saute shallots, garlic and mushrooms in olive oil until halfway cooked. Transfer to a mixing bowl.
Begin to brown meats until ground turkey is no longer pink.
Drain meats and transfer to mixing bowl.
Add barley, black beans, oregano, thyme, salt, and Parmesan cheese.
Beat egg and add to meat mixture.
Fill the zucchini boats with the mixture.
Top with mozzarella cheese.
Bake at 350 for 35-40 minutes.
Cut each boat into thirds.
Makes 6 servings (approximately 1.5 cups.
