    3 chicken breast boiled, and then shredded
    4 cups water
    1 cup brown rice instant or regular
    1 can black beans
    1 cup chicken broth
    1 can diced tomatoes
    1 can cream of chicken 98% fat free
    1 can cream of mushroom 98% fat free
    1 pkg taco seasoning
    7 servings of kraft shredded fat free cheddar cheese
    6 tablespoons light sour cream


1. put chicken into a pot and boil it until done.

2. If you are using regualr brown rice cook it in the chicken broth yeilded from the cooked chicken.
(if you are using instant rice, skip this step)

3. spray pam in a 9x13 pan

set aside

4. shred chicken breast and put into a large bowl

5. To the bowl, add taco seasoning, cream of mushroom, cream of chicken, drained black beans, tomatoes, chicken broth and cooked or instant rice.

6. mix well, and pour into the 9x13 pan.

7. cook covered for 30 min at 350.

8. take out and top with cheddar cheese.

9. put it back into the oven and contiue to cook for an additional 20 min.

when serving, top with each serving with 1 tablespoon of sour cream.

This meal is perfect with a side salad.
