Introduction

I learned this recipe many years ago. It's great during the summer and also as a quick easy breakfast for the family. I learned this recipe many years ago. It's great during the summer and also as a quick easy breakfast for the family.

Ingredients

    1 box of soft tofu - smashed
    1 rib of celery - finely chopped
    1/4 white onion - finelyl chopped
    1/2 T sweet pickle relish
    1 T light Miracle whip or light Mayonaise (your choice)
    1/2 T turmeric
    1/2 tsp. celery seed
    salt and pepper to taste

    Combine all ingredients and then refrigerate if you want to for about an hour. It looks and tastes just like egg salad. It like to serve it on rye bread with lettuce leaves.

Directions

Smash the tofu, combine all ingredients and let cool in the refrigerator if you have time. Divide into 4ths and then spread 1/4 on a slice of any type of bread and top with another slice of bread (not included in calorie calculator.)
