Introduction

Ingredients

0.5 cup Splenda
0.25 cup sugar
0.5 cup apple sauce
1 to 2 tbsp Extra virgin olive oil
0.5 tsp almond extract (optional) but so yummy!
2 egg whites (0.25C)
3 ripe bananas
2 cup whole wheat flour
0.5 tsp baking soda
1 tsp baking powder
0.5 tsp salt
0.25 cup orange juice
***if you want a bread that is less dense, halve the whole wheat flour with white flour.
***You can leave out the Oil but the bread will be slightly less moist.
Directions
Beat sugar, Splenda, oil and applesauce in large bowl.
Add eggs, mashed bananas and almond extract; beat well.
In different bowl, mix flour, baking soda, baking powder and salt together. Add to Banana mixture and blend well. Mix in orange juice combining well. Pour into 12 greased muffin pans or 1bread loaf. Bake at 350 for about 20 minutes (muffins) or 1h30minutes for bread.
Once baked, let cool. When completely cooled, wrap and leave at room temperature overnight. Tastes much better in the morning!
1 muffin (recipe yields 12)= 130cals, 1.7g fat, 28.7g carbs, 3.3g fiber, 3.7g protein.
I bread slice ( recipe yields 9 X 1inch thick slices)= 174cals, 2.3g fat, 38 carbs, 4.4g fiber, 5g protein.
