    1 pound butternut squash

    1 teaspoons olive oil
    1/2 cup chopped onion
    2 cloves garlic, chopped
    1/4 teaspoon light salt
    1/4 teaspoon pepper
    1/8 teaspoon ground sage
    1/2 cup fat-free half & half

    1 1/4 ounces gruyere cheese, grated

    16 ounces gnocchi, prepared according to package directions
    2 tablespoons light butter


1. PIERCE butternut squash and microwave on high for 4 minutes

2. PEEL butternut squash, cut in half and remove seeds, then chop into 1-inch pieces. Return to microwave for another 7-10 minutes until squash is cooked through.

3. WHILE the squash is cooking, heat olive oil in a skillet over medium high heat. Add onions and garlic and saute until transluscent. Remove from heat and add the salt, pepper and sage.

4. TRANSFER cooked squash to a food processor. Add the onion mixture and cream. Puree until smooth.

5. COOK the gnocchi according to package directions and drain. Heat the butter in a skillet and add the drained gnocchi and cook until slightly browned. Remove from heat.

6. IN a saucepan pour the butternut squash mixture cook over medium heat. When the mixture is very warm and bubbly, add the grated cheese and stir continously until it is melted and fully incorporated.

7. TRANSFER the gnocchi to a serving platter and cover with butternut squash sauce.
