Introduction

Quick summer one-dish dinner for two Quick summer one-dish dinner for two
Number of Servings: 2

Ingredients

    1.5 T Olive Oil
    2 c cauliflower, 1" pieces
    4 cloves Garlic, sliced (to taste)
    1 c chopped greed peppers
    6 oz. scallops
    1 c red ripe tomatoes (or 1 15-0z can), diced
    4 T fresh basil, chopped
    2 T fresh oregano

Directions

Heat olive oil in 12" skillet. Add cauliflower, garlic and stir-fry 3-4 minutes. Add peppers and stir-fry another1-2 minutes. Add scallops, less than a minute just until a bit brown.. Add tomatoes, juice, basil and oregano, bring to boil then lower heat and simmer 2-3 minutes. Serve in a soup bowl, sprinkle parmesan on top and garnish with small basil leaves.
