    3 Egg Whites
    1 Egg, whole
    4 Cherry Tomatoes
    1/2 Cup of fresh Spinach
    1/4 cup of milk
    1 tbsp of onion
    1 tbsp of green pepper


Whisk egg whites and egg together with milk. Dice all vegetables. Mix egg mix and vegetables together and pour into aluminum muffin tins. Bake at 375F for 25-30 minutes until set. Recipe makes 5 quiche cupcakes.

  • This recipe would be perfect for me, just because of the dairy I didn't give it 5 stars but everything else I can have. I'm always looking for something good for breakfast. It's just so boring to have eggs! This was very good and delicious! - 10/9/09
